The first recipe makes two portions and uses thick smoked sausages, such as kielbasa-style sausages or frankfurters. Its appeal is the contrast between soft bread, sharp sauerkraut and a crunchy pangrattato topping.

The Russian-style sauce combines ketchup, mayonnaise, chopped pickle, Worcestershire sauce, white-wine vinegar and Tabasco. The breadcrumbs are fried in olive oil until golden, while the sausages simmer in shallow water for five minutes. The rolls can be warmed over the pan, keeping the preparation compact.

  • Seasoning: Finish with crushed caraway seeds and salt.

Shrimp-and-sausage toast for a crowd

The second option serves six people as an appetiser and is better suited to early preparation. The filling combines 400g of cleaned raw shrimp with 200g of sausage meat.

Half the shrimp is blended with soy sauce, fish sauce, vinegar, garlic and ginger. The rest is chopped and mixed with red chilli, coriander and the sausage mixture, giving the topping both smoothness and bite. It is spread across six thick slices of soft white bread, covered with black and white sesame seeds, then chilled for at least one hour.

For service, the slices are fried in oil at 180C, sesame-side down first, for about two and a half minutes per side. Keeping them in a low oven preserves their crispness while the remaining batches cook.

Pairing and match-day timing

A cold lager or pilsner is a practical partner for both recipes: the carbonation cuts through the sausage and fried coating, while the bitterness handles chilli and pickle. Prepare the sauce, pangrattato and toast filling before the match, leaving only frying and assembly for the live action.
